Simple recipe for Italian Roast Potatoes
Peel the potatoes, then cut them, by hand, using a small sharp knife (if right-handed, hold the potato in your left, then slice towards you with your right, using the index to little finger to push the knife towards you, with your thumb acting as a stop), so they end up irregular, with thin edges and thicker middles.
Place in a roasting dish, drizzle with olive oil, season with salt and, if desired, add a few sprigs of fresh rosemary.
Roast in a hot oven (approx. 220°C or 200° fan-assisted) for 1 hour to 1 hour & 15 mins, turning halfway through cooking.
