This very quick and easy and very low-calorie chicken and egg soup is a fantastic winter warmer and only takes about 5-10 mins to make

I love food, so losing weight has been an on-going battle in my life for as long as I can remember.  I therefore love putting together quick & easy recipes that can keep me on the straight & narrow while still allowing me to enjoy superb flavours & textures.

One great thing about winter is that it’s a perfect time to eat lots of soups, and I adore soups!

Try this chicken and egg soup and you’ll want to make it over and over again.

Ingredients – as a starter for 2 people or as a light meal for 1

Approx. 50 kcal per serving when made with Knorr Chicken Stockpot (refer to other manufacturers for calorie guidelines if using different stock cubes/stockpots)

  • 500ml chicken stock (home-made or made with 1 Knorr Chicken Stockpot* and 500ml water)
  • 1 large egg, white only
  • 50g cooked/roasted chicken breast meat (you can buy this in most supermarkets, or use left-over chicken from your Sunday Roast or from making your home-made chicken stock)

Method

Heat up the chicken stock (or make it with stockpots/cubes as directed by the brand you’re using for 500ml finished stock)

Add chicken, torn by hand into tiny pieces.

Take the white from one large egg, whisk lightly with a fork. Once the stock and chicken is boiling vigorously, start whisking it with a fork and gradually add the egg white, whisking it in with the fork as you go, so it forms tiny shreds of egg white in the stock.

Serve immediately – you can add some freshly chopped parsley at the point of serving, or other herbs of your choice (herbs I like with chicken are parsley, thyme, dill or tarragon).

*You can use any brand of stock cube/stockpot, of course.  I just like the Knorr Chicken Stockpots because I feel they taste as close to home-made as it gets without making the stock yourself and always have a few in the cupboard.  This is purely my own opinion, though.  My recipes are not sponsored or endorsed by Knorr in any way (I wish they were!
